Eggless Plum Cake

Eggless Plum cake | No alcohol Plum cake | New year special cake recipe | 2Foodie.

 Ingredients : 

Sugar – 1/2 cup

 Water – 1 cup 

cherry 2 tbsp, chopped 

Raisins – 1/3 cup 

Cashew – 1/4 cup, chopped 

Almond – 1/4 cup , chopped 

Tuti fruity – 1/3 cup 

Ghee / Butter – 1/2 cup 

Condensed milk – 1/2 cup 

Maida ( all purpose flour ) – 1 cup 

Baking soda – 1/2 tsp

 baking Powder – 1 tsp 

Dry ginger powder – 1 tsp 

Cinnamon powder – 1 tsp 

Nutmeg powder – 1 tsp

Instructions:

  1.  Prepare caramel water  : Allow sugar to melt , after that add water into it .
  2. cook the fruits : Cook the mixed dried fruits in Caramel Water for at least 10 min. This makes the fruits plump and juicy.

  3.  In a large mixing bowl, sift together the flour, baking powder, baking soda, cinnamon, and nutmeg powder. Mix the chopped nuts into this dry mixture and set aside.

  4.  In another bowl, whisk together the Condensed milk, and vanilla extract until smooth. Add the oil or melted butter and whisk again.

  5.  Gradually add the dry ingredients to the wet ingredients. Mix gently using a spatula, folding the mixture until well combined.

  6.  Drain the cooked fruits and fold them into the cake batter. If the batter is too thick, add a little milk or the leftover caramel water to adjust the consistency.

  7.  Preheat the oven to 170°C (340°F) or kadhai . Grease and line a cake tin with parchment paper. Pour the batter into the prepared tin and level it out. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

  8. Cool and serve. : Allow the cake to cool in the tin for 10-15 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
