Ingredients : 

Capsicum – 2 , medium sized

Onion – 1 , medium sized 

Oil- 3 Tbsp

Cumin seeds – 1 tsp

Mustard seeds – 1 tsp

Asafoetida – 1/4 tsp

Ginger Garlic Paste – 1 tbsp

Onion – 1 , chopped

Tomato puree – 1 cup

Turmeric powder – 1/2 tsp

Red chili powder – 1 tsp

Salt – 1 tsp

Coriander powder – 1 tsp

Dried fenugreek leaves – 1 tsp

Fresh cream – 1 tbsp

Green coriander leaves – 1 tbsp, chopped

Instructions :

    • Wash and Chop the capsicums and onions.
    • Heat oil in a pan over medium heat.
    • Add the sliced capsicums & onion to the pan.
    • Sauté until the capsicums & onions are slightly tender but still have a crunch.
    • Remove the fried Capsicums & onions from the pan
    • Add cumin seeds and mustard seeds. Allow them to splutter.
    • Add Asafetida 
    • Add Chopped Onion into the pan
    • Sauté Until onion turns into the golden brown 
    • Add Ginger Garlic paste & Finely chopped green chili 
    • Add tomato puree and cook until they become a thick gravy.
    • Stir in the turmeric powder, red chili powder, and coriander powder.
    • Cook for a minute to allow the spices to release their flavors.
    • Sprinkle Dried fenugreek leaves and salt according to taste.
    • Allow the curry to simmer for a few minutes, letting the flavors meld together.
    • Garnish with Fresh cream & fresh coriander leaves.
    • Serve hot with steamed rice, roti, or naan.

– 1-2 green chilies, finely chopped

– 1 teaspoon cumin seeds

– 8-10 curry leaves

– 1 tablespoon Cashew

– 1 tablespoon Almond

– 2 tablespoon ghee or oil

– 1 teaspoon sugar (optional)

– Salt to taste (sendha namak for fasting)

– Fresh coriander leaves for garnish

– Lemon juice to taste

#### Step 1: Soak the Sabudana

 

  1. Rinse the sabudana under cold water until the water runs clear.
  2. Soak the sabudana in water for about 4-6 hours or overnight. The water level should be just above the sabudana.
  3. Drain any excess water from the soaked sabudana and set aside.

#### Step 2: Prepare the Ingredients

 

  1. Peel and dice the potatoes into small cubes.
  2. Finely chop the green chilies.

#### Step 3: Cook the Sabudana Khichdi

 

  1. Heat ghee or oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add the chopped green chilies and curry leaves. Sauté for a few seconds until fragrant.
  4. Add Peanuts along with Cashew and almond , fry them until crisp
  5. Add the diced potatoes and cook until they slightly golden.
  6. Add the soaked and drained sabudana to the pan. Mix well.
  7. Add salt, and sugar (if using). Mix everything gently to combine.
  8. Cook the sabudana on low to medium heat for about 5-7 minutes, stirring occasionally, until they become translucent and soft.
  9. Turn off the heat and add lemon juice to taste. Garnish with fresh coriander leaves.
